Группа Astral Winter была образована зимой 2008 года Джошем Янгом (Josh Young) как сольный проект. В 2009 году к Astral Winter присоединяется вокалист Фил Хемсворс (Phil Hemsworth). Также зимой 2009-го началась работа над первым официальным демо-альбомом "Illustrations Of Death", который вышел через несколько месяцев - 9 августа - на собственном лейбле музыкантов, Immortal Frost Productions. Релиз был издан тиражом в 100 копий и продан за два месяца.

В начале 2010 года была начата работа над первым полноформатным альбомом, "Winter Enthroned". Его выход планировался на начало 2011 года, однако из-за ухода Хемсворса, после чего Янг взял на себя и вокальные партии, дату выпуска пришлось перенести на другое время. В августе работа была практически завершена, и "Winter Enthroned" вышел 27 сентября 2011 года.Материал получил положительные отзывы и был описан как Epic Melodic Black Metal с прекрасными клавишными и душераздирающими гитарными соло.

В начале 2011 Astral Winter приступают к работе над вторым альбомом, "Forest Of Silence", материал для которого был написан в период 2010-2011 года. Помимо этого, Джош также пишет материал для мини-альбома, который пока не имеет названия. Выход полноформатника должен был состояться в 2012 году, однако по каким-то причинам этого не произошло.

Весной 2013 года лейблом Immortal Frost Productions был выпущен мини-альбом Astral Winter под названием "Perdition". В настоящее время готовится релиз нового альбома, который был назван "Forest of Silence".
